St. Patty's Day Protein Cupcake
We are busy in the kitchen gearing up for St. Patrick's Day and decided to try our luck with these toddler approved healthy treats! I opted out, mostly because I didn't have any on hand, but you could always add a drop or two of green coloring to make these treats so much more festive!
Because I have two kids, a husband, dogs, and my figurative baby, Baby Booster, I decided to cheat this year and I used a mix. I know, I know, shame on me! But seriously, this mix is amazing and the best part? You can buy it on Amazon!
I followed the instructions on the pouch, except I wanted to take it up a notch so I added 2 scoops of Tahitian Vanilla Baby Booster. I also added 2 teaspoons of mint extract. This satisfied my pregnancy craving when I was pregnant with my son (born around St. Patrick's day!) so it was especially fun to bring back this recipe and adapt it for my fellow expectant mother's, and for any of my nursing moms! Nursing moms need additional calories, too! I also added the Baby Booster protein that is safe for pregnancy and breastfeeding moms because protein is so important for pregnant women and nursing moms. Protein will help keep you full longer, between nursing sessions, and it will give you more energy during the day so you don't run yourself ragged.
Real shocker here, but for the frosting, I used the same brand that I also purchased from Amazon.
That's it! It was so easy and simple! I cut a few lime wedges, and grabbed a few mint leaves from my garden to use as a garnish. Festive, cheerful and fun!
