Fall has arrived and so has the challenge to see how much pumpkin I can eat in the next two months! I am so basic with my love for pumpkin that it’s unreal but I don’t care. I also passed this love down to the kids and they know when the seasons change it’s time for their favorite fall kitchen activity: PUMPKIN CHOCOLATE CHIP COOKIES! In the past, I purchased the store mix (I know, I know… not good for us at all) but this year I decided to make my own healthy version! I am obsessed with using the different Baby Booster protein powder’s to add nutrients to our meals and snacks and I knew that their chocolate protein powder would work perfectly with pumpkin. The Baby Booster protein powder is jam packed with nutrients and perfect for any pregnant ladies and nursing mama’s, I’ve also noticed how much my kids love it and I sneak it into my food prep whenever it is cohesive. You can read more about what makes it so great in THIS post. As a nursing mama, I need 500 extra calories a day to replenish my body, what better way to help with those calories than to make cookies! The Kona Mocha protein powder pairs perfectly with pumpkin so I used that flavor when making these cookies.
– 1/4 cup ground flax seed
– 2 tablespoons chia seeds
– 1/2 tablespoon of ground cinnamon
– 3 large eggs
– 2 teaspoons of vanilla
– 1/4 cup of almond milk
– 1/4 cup sugar in the raw
-1 serving of Baby Booster Kona Mocha Protein Powder
– 1 teaspoon baking soda
– 1 teaspoon baking powder
– 1 can of pumpkin puree
– 1/4 cup of chocolate chips
– 1/4 cup of chopped pecans or walnuts
1. add all ingredients to bowl and mix until blended
2. spoon tablespoon sized portions onto greased cookie sheet
3. bake on 350 degrees for 10 minutes
4. cool for 5 minutes and then enjoy!
